Taho... taho!


Every morning, I always buy a cup of taho (Php 10.00 only). When I was a child, my Mom told me that taho is good for my health, and its true. Why? Because taho is made of fresh soft/silken tofu, arnibal (brown sugar and vanilla syrup), and pearl sago.

Taho is a Philippine snack food that traces its origin to the Chinese douhua.

The process of making taho: The main ingredient, fresh soft/silken tofu is processed to a consistency that is very similar to a very fine custard. Brown sugar is then heated and caramelized to create a viscous amber-colored syrup called arnibal. Sago "pearls," purchased from the local market or palengke, are boiled to a gummy consistency until they are a transluscent white.

The Magtatahô is a common sight in the Philippines. Wherever you are inour country, you can see them from 6:00 in the morning up to 12:00 in the afternoon. A magtatahô carries two large aluminum buckets that hang from each end of a yoke. One of the buckets (the smaller one) holds the arnibal and sago "pearls"; the other, larger bucket carries the tofu base.
